Ayah makes fun of me because I say “Queen-wa” Instead of “Keen-wa”.
But do you know what? Quinoa is fit for a queen, so I will continue to call it “Queen-wa”.
So fit for a queen, that I eat it for breakfast! Sometimes I eat the whole quinoa seeds, but more often I’ll eat quinoa flakes, because they’re fast, fun and they’re just as easy to prepare as instant oatmeal. Except unlike instant oatmeal, quinoa flakes are high in nutrients and also protein.
I’m always hearing you should eat more protein for breakfast, but most mornings I wake up and the last thing I want is a protein smoothie or some eggs. I want CARBS! In comes the all mighty quinoa, packed with healthy carbohydrates, and more importantly, protein!
You can find quinoa flakes at most health food stores. You can buy it boxed, but I’ll usually buy it in bulk to save a few bucks.
To quench my morning carb cravings, along with my morning chocolate cravings, I came up with cookie dough quinoa. I recommend topping this delicious concoction with a heavy drizzle of maple syrup, not that you’re not already sweet enough, but there’s a light bitterness to the quinoa flakes that the maple syrup cuts with perfection. It’s also high in antioxidants and a proud representative of the Canadian homeland.
So you want cookies, carbs and chocolate for breakfast? This isn’t it, but it’s equally as delicious and will give you the perfect start to the day!
- Cookie Dough Quinoa Flakes
- 1 cup of Quinoa flakes
- 1 tsp Chia seeds
- 1/2 tsp Raw cacao
- Pink himalayan sea salt *to taste
- 1/2 tsp Vanilla
- 1/2 tsp Cinnamon
- 1 tsp raw cacao nibs
- Maple syrup on top
- *1/2 tsp Xantham gum if you want a thicker texture
- *You can also add protein powder if you want a really high protein breakfast!
1. Mix quinoa flakes with ingredients.
2. Pour boiling water over flakes and stir for 90 seconds.
3. Top with favourite ingredients and sweetener of choice (I recommend maple syrup) and enjoy![/box]
