Guys, I’m totally guilty of being a late-night snacker. What can I say? Unwinding and catching up with my DVR goes hand and hand with munching and crunching on snacks a little too easily. And yeah, I know, late-night snacking is not good for a person. I’ve tried before to stop entirely, but who am I kidding? A brand new episode of Glee demands a bowl of something bite-sized on the coffee table!
Rather than fight this obvious fact, I’m learning to work with it, which means that rather than reaching for a bag of kettle chips I’ll often do what any health loving late-night snacktress would do; I whip up a batch of sweet potato chips.
Easy, spicy, a little crispy and very delicious, this snack provides tons of vitamin A, fiber, and antioxidants while satisfying junk food cravings. With the help of a mandolin for slicing, they only take a few moments to prepare. Give them a try the next time you want to indulge in some snack foods, your body and mouth will thank you.
[box]Baked Sweet Potato Chips
- 3 sweet potatoes
- 1 tablespoon of olive oil
Scrub sweet potatoes and slice in to thin rounds (approx. 1/8th inch) a mandolin makes this job go very quickly, but a knife and a steady hand will get the job done too.
Toss your sweet potato slices in olive oil and lay them in a thin layer on a cookie sheet trying not to let them over lap.
Bake, flipping once, in an oven preheated to 350 and cook for 20-25 minute or until crispy around the edges. If you want to get them extra crispy and are lucky enough to have a convection oven in our life, by all means cook them in there.
When cooked, you can serve them plain with a few shakes of sea salt and curry dip on the side, or toss with other seasonings hot out of the oven.
Fiery Seasoning
Sea salt, cayenne pepper, and New Mexico chili powder.
Sugar & Spice Seasoning
A pinch of brown sugar, salt, cayenne and cinnamon.
Garlicky/Cheesy
A chopped garlic clove, a few pinches of freshly-grated Parmesan cheese and some chopped fresh parsley.
Curry Dip
Mix 1/2 cup plain yogurt with 1/2 teaspoon curry paste.[/box]

This looks like the most simplest sweet potato chip recipe I’ve come across yet.
I just made some of these. Super yummy!!! I made some plain and some with Chipotle seasoning – both were really good. I know this is going to be something I make often. Thanks for the inspiration!
I’m so glad you liked them! Chipotle and sweet potatoes were made for each other. Try them with some garam masala, you won’t be sorry.
