Since we’re getting nostalgic about chocolate we used to love, like Bounty Bars, let’s talk about After Eight chocolates.

Were you ever at a dinner party when you were little and the adults pulled a box of After Eight chocolates after dinner?
Yum. I love the cool tang of peppermint covered in dark chocolate. My friend in London sent me a supreme gourmet version of these when I was living in Paris. They were so good that I ate them all in one sitting and practically screamed with delight before bouncing off the walls with a sugar high.
Since I’m trying to avoid those crazy sugar highs, especially after 8 p.m. , this warm cup of milky tea (with coconut milk) does just the trick.

I originally made this hot cup of love around Christmas time when I was craving candy canes. Now that candy cane season is over, I’m dreaming of After-Eight chocolates.
If you want to make this especially remiscent of that elegant treat- I suggest pouring a handful of dark chocolate chips or carob chips into your mug and giving it a stir.

- A mug of steeped peppermint tea
- A generous pour of coconut milk
- 1/2 tsp peppermint extract
- 1/2 tsp vanilla extract
- 1/2 tsp cinnamon or allspice
- 1/2 tsp raw cacao
- Stevia to taste
- milk frother
- Dark chocolate chips optional
Combine ingredients, heat and froth! I use an aerolatte frother! [/box]
