B.Belles, is a very appropriate name, since Kris is BELLE indeed! She’s a total babe, looks like a fitter Jennifer Anniston with better hair, and rocks a healthy gluten-free, vegan diet, while making some of the tastiest treats you’ve ever seen!
Today she’s been kind enough to share a special coconut recipe she created just for Healthy, Tasty, Cheap! I’ll let her take over:
Wow! When I was first asked to come on over here and share a healthy coconut recipe with you, I almost fell off my seat with excitement!
My fire inside is to share with people how to have a health and wealth connection within by fueling your needs of great tasting food and sweets without the suffering afterwards.
It is absolutely stunningly gorgeous when you see a dessert sitting in front of a loved one and you share with them that is actually HEALTHY and you watch the guilt run off the dessert nibblers face and a large smile appears.
Coconut is tied with cocoa as my favorite ingredients to make dessert recipes out of. It adds sweetness, textured, and oomph to any sweet treat. It whisks you away on a tropical vacay for the few short minutes you are indulging and then leaving you with some health benefits to absorbs afterwards.
Today I am sharing with you a super easy, no bake, no guilt, tasty and sweet recipe that will be always sitting in your freezer……I guarantee.

Coconut Brownie Peppermint Patties are the name of the game today. Lets make them so we can share them……or not
[box]Coconut Brownie Peppermint Patties
*This recipe makes 12 mini peppermint patties
Brownie Crust:
- 3 tbsp {heaping} cocoa
- ¼ cup shredded coconut
- 1 tbsp gluten free flour blend
- ½ cup perky’s crunchy flax cereal {can add extra coconut to replace this}
- 4 medjool dates {chopped}
- ¼ cup warm water
- 3 tsp coconut oil {melted}
- Peppermint Filling:
- 4 tbsp coconut oil
- ½ tsp peppermint oil
Fudge Top:
- 2 tbsp cocoa
- 1 tsp coconut oil {melted}
- 3 medjool dates {chopped}
- 1 tsp vanilla
- 3 tbsp warm water
To Make Coconut Brownie Peppermint Patties:
- Soak dates for the base and the top separately with the appropriate amounts of warm water. Let them soak for 10 minutes.
- Mash the dates and water into a paste.
- In a mixing bowl mix all of the dry base ingredients together, stirring in the date paste and coconut oil.
- Take a teaspoon and press a teaspoon amount of the cocoa brownie base in mini muffin tins.
- Place in the freezer while you make the rest of the layers.
In a bowl mix together the coconut oil and peppermint oil. Stir until fluffy and smooth. - Dollop a ½ tsp – 1 tsp amount on each chilled brownie bottom and spread it evening across the brownie.
- Place back in the freezer while you prepare the top layer.
- Mix warm soaked dates into a paste. Add in the cocoa powder, melted coconut oil and vanilla and stir until smooth and creamy.
- Add a layer of fudge topping to each peppermint pattie and place back in the freezer for 20 – 30 minutes until ready to serve.

These little beauties live constantly in my freezer.
They are healthy, tasty and very satisfying for anyone looking for a fudgy chocolate fix!
