Soup Week

Okay, are y’all ready for this? Gillian and I are mixing up the format a little. Instead of having an ingredient of the week this week, we are having a theme week! We are still going to have frequent ingredients of the week, but keep your eye out for the new theme week category, it’s going to be fun. Take this week for example, we get to share all sorts of recipes for one of my favorite food groups; soup!

Soup is one of my favorites because it is a hearty one pot meal, and an excellent way to make an entrée that is healthy, tasty, and cheap. In the cold and rainy months, I often make a giant pot of soup over the weekend and then ladle it out for quick dinners and work lunches throughout the week. It is also a great way to feed a large group of people, and it has the added bonus of making your house smell amazing and homey. Is there anything more comforting than a delicious pot of soup bubbling away on the stove top? I think not! I always keep canned tomatoes, some tomato paste, vegetable stock, dried lentils, split peas, garbanzo beans, and kidney beans in my pantry so that I can whip up a big batch of soup at a moment’s notice.

Although Gill and I have already shared some great soup recipes such as Squash Chipotle Soup, Kristin’s amazing Moroccan-spiced Chickpea Carrot Soup, Italian Sausage Kale Soup, Sweet Potato Corn Chowder, and a deliciously cheeky Kale and Pea-ness Soup, we are looking forward to sharing even more of our favorite soupendous meals this week.
