Golden Beets

If red beets aren’t your thing, I recommend giving golden beets a try.

I first bought golden beets from a farmer’s market, where the woman kindly told me “They won’t stain your hands and they roast up nice and sweet!”

She was right. Golden have a much more subtle taste and are nice and sweet.

As much as I love red beets, sometimes you risk the red colour dripping into your dish or onto your hands- not that I mind- and golden beets are a fun alternative.

I love to throw some chopped golden beets in with other mixed vegetables and roast them. But I also love them prepared like this, steamed, tossed with some olive oil and herbs, and served at room temperature.

This is a great dish to bring to a party or a barbecue as you don’t have to worry about heating it up and the flavour only gets better with time!

Golden Beets

A light side dish that’s warm and comforting.
Ingredients
  • 7-10 Small golden beets
  • ¼ cup Chopped parsley
  • 2 tbsp Olive oil
  • Sea salt

Instructions
  1. Put beets in a large pot and immerse halfway with water.
  2. Steam beets 20-40 minutes until tender.
  3. Add olive oil, parsley and salt.
  4. Serve at room temperature.

mmm I do love golden beets!

my favorite way to prepare them is as a relish with capers, olive oil, and fresh parsley :)

Hi Gillian, do you leave the skins on? I was at St. Lawrence Market this weekend and should have picked up some:)!! I used to live on Front St. and loved the Saturday market.

That’s my hood! Great question- I leave the skin on for the cooking of it and them peel it off afterwards!
