The other week I went for dinner at Fresh with two lovely ladies.
Fresh is an ultra healthy vegetarian restaurant in Toronto with a menu full of big salads, veggie bowls, juices and more.
While I love Fresh, I’ve been dissapointed in their salads before. I find they are often lacking in the dressing department and not generous with the prime ingredients like nuts and seeds.
But this time, I was blown away. I took my friend Krissy‘s lead and ordered the vegan caesar salad with tempeh bacon. Holy smokes. This rocked my socks off!
We tried to determine what was in the dressind and Krissy suggested their was probably soft tofu – something we weren’t too excited about since both of us avoid soy when possible.
I was eager to try re-creating this dressing on my own but using avocado for a natural creaminess.
This dressing brings that dream alive. It’s reminiscent of a caesar dressing, but fresh, light, natural, raw, vegan, and full of beautifying fats and vitamins.
Feel free to add tempeh bacon or some kind of crouton to this salad to pump it up even more!
- 1 tbsp raw tahini
- 3 tbsp raw apple cider vinegar
- 1 tbsp lemon
- 3 tbsp water
- 1 tsp dijon
- 2 garlic cloves
- 1 tbsp nutritional yeast
- ½ avocado
- Blend in a food processor or blender and adjust to the consistency you like.

Okay, talk about same wavelength! Just last night the HH and I ate my new “Caesar Salad” recipe with avocado-based Caesar dressing! Mine is a little different from yours (yours looks much prettier), but the concept is about the same, avocado for creaminess. Whoah! I’ve never actually tried the one at Fresh but I think next time I will have to give it a go.
I doubt mine is prettier! You are the queen of beautiful food. But yes out taste buds are definitely in alignment!! If you need a Fresh Caesar salad eating partner I’m game
