So the other day I had a craving for chocolate.
What else is new?
It was that afternoon slump and I needed a pick me up to get me through the rest of my to do list for the day.
Then I remembered it was avocado week and decided to make something I’ve been meaning to try for months now, chocolate avocado pudding!

Since I had just bought a new mint plant at the farmer’s market, I decided to put it to use and make a chocolate mint avocado pudding.
To make this healthy treat I used raw cacao (high in antioxidants), mint, peppermint and vanilla extract, avocado, and a touch of stevia for sweetness. Honey, dates, or maple syrup would also be delicious I’m sure!

The result was a very strong cacao flavour, a smooth texture, a minty freshness and an extremely satisfying mid-day pick me up!
You could always use less cacao and more avocado, but I found that half was just perfect!

- ½ Avocado
- 2 tbsp raw cacao
- 2 tbsp almond milk
- Stevia
- Vanilla extract
- Peppermint extract
- Fresh mint
- Blend and enjoy!
