If you’re looking for a fun, filling, raw vegan meal to make, this raw avocado sushi bowl will rock your body!

Initially I intended on making raw sushi by making my own “cauliflower rice”. I started by blending some cauliflower in the food processor, and I thought it would be pretty delicious to add a bit of tahini and apple cider vinegar as well.

I prepped my beautiful avocado into fine slices fit for sushi.

Laid out a pretty roll.

And as soon as I started to roll the whole thing fell apart. I wanted to sob. It was a raw food fail. But I don’t really believe in failure- I believe in opportunity. So I thought “How can I make this work?” And then I remember a sushi bowl my friend Amanda had made recently and knew this dish could be saved.
Thus, the raw sushi bowl was born.

I topped my bowl of “rice” with all of my ingredients and drizzled it in tamari, spicy sauce and wasabi. YUM!

I also kept pieces of Nori on the side which I used to rowl my own little sushi bites, which was really fun and delicious!

If I were to make raw sushi again I would likely omit the tahini in the cauliflower and keep it really dry, but I loved the smooth cauliflower texture and this bowl was so fun to eat!
- Head of cauliflower
- 1 tbsp Raw apple cider vinegar
- 1 tbsp Raw tahini
- Salt to taste
- Avocado
- Red pepper
- Sheet of Nori (chopped)
- Sriracha
- Soy sauce or tamari
- Wasabi
- 1. Make cauliflower rice
- 2. Top with your favourite sushi ingredients!

Pine nuts and/or cashews blended with the ‘rice’ and vinegar would soak up some of the moisture as well as dehydrating it a little while with a tiny but of agave to make it sticky.
