Summer Tomato Pesto Salad

My love of basil continues.

With my new fresh basil plant, I wanted to throw together a simple basil salad to go with dinner on a warm summer night. This fit the bill.

Fresh baby tomatoes, cucumber, shallots, basil and a drizzle of a very simple pesto and balsamic dressing is all you need.

If you want to get fancy you could always add some freshly shaved parmesan, or even add some beans or canned tuna with a side of fresh bread for a light summer meal.

If you don’t eat dairy, make sure you buy a pesto with no cheese in it, or simply make your own. You could even use my kale pesto!

But most importantly, eat it with a healthy serving of summer sun, and enjoy.

Summer Tomato and Pesto Salad
 

Ingredients
  • Tomato
  • Cucumber
  • Basil
  • Shallots
  • Dressing:
  • 1 tbsp pesto
  • 1 tbsp balsamic vinegar

Instructions
  1. Toss together salad
  2. Mix pesto and balsamic
  3. Drizzle over salad, add fresh parmegiano if you like

Oh yum. I love basil! I just got a new plant too. Can we cut to the chase and declare this the summer of basil?
