This quick cheesy scramble is sort of my go-to weekend breakfast. There is just something about Sundays in particular that calls for leaving the cereal box on the shelf and cooking up some eggs. These are essentially simple scrambled eggs with some cheese and a few cherry tomatoes, but with the addition of fresh thyme, basil, and a few springs of flat leaf parsley, the simple dish feels fresh and summery. Eat it with some toast and coffee while reading the paper or catching up on your favorite blogs. Heaven.
Herb Scramble

Ingredients
- 6 eggs
- 1 cup cherry tomatoes, halved
- 1 T chopped fresh basil
- 1 T chopped fresh thyme
- 1 T chopped fresh parsley
- ½ cup grated cheese (I used a 4 cheese Italian blend)
- Salt and pepper to taste
Instructions
- In a bowl, scramble eggs, chopped herbs, salt, and pepper.
- Add to a greased pan on medium low heat.
- Add tomatoes, sprinkle with cheese and cook until desired consistency.
- Serve with toast and coffee.

yum, have not tried in herbs in my eggs, next time for sure
You should! Sometimes just make them with a ton of chopped basil and call them green eggs. Delish!
