I love Sunday mornings.
I would love to occasionally share a “Sunday Morning” recipe posts with you, as Sunday mornings are my favourite time to create new recipes!
Now that I’m focusing on eating more protein and cutting back on sugar, I really wanted to make a high protein, sugar-free granola bar this morning. I couldn’t find a recipe I liked online, so I decided to make one up. I used what I had in my pantry and blended brown rice flour, coconut oil, shredded coconut, almond butter, almond milk, Sun Warrior protein powder and some cinnamon and stevia, lined an 8×8 pan, popped it in the oven and called it a day.
Thirty minutes later they were ready. I hungrily cut a steamy hot piece out of the pan and popped it in my mouth. I realized that they were much less like a granola bar, and much more like a heavy bread! That’s why rather than give you a granola bar recipe, I have a recipe for Protein Punch Coconut Bread! It is absolutely delicious with almond butter and jam (I love Crofters all-natural low sugar jam), and reminds me of my grandmother’s wheaten bread!
I personally love bread that is thick and heavy. Combined with the healthy fats and protein, it is incredibly satisfying!
- 1 cup sifted brown rice flour
- ¼ tsp. xantham gum
- 2 cups oats (I use wheat-free)
- 2 tbsp milled chia or flax
- 1 tsp cinnamon
- Stevia
- 2 scoops protein powder (I use Sun Warrior)
- 1 egg (or chia/flax egg)
- ⅓ cup coconut oil
- 1 cup almond milk
- Shredded coconut (optional)
- Preheat oven to 350
- Grease an 8×8 pan
- In one bowl mix dry ingredients (make sure to sift flour)
- In another bowl whisk egg, oil and milk
- Add wet to dry ingredients
- Bake for 20-30 minutes
- Slice and enjoy!

Great recipe!! I will definetely make this on the weekend for my busy workweek. I start my new work on Friday and since there is (again!) lots of commuting involved (again 3 hours each and every single workday), it will be a lifesaver to have a healthy breakfast on-the-go meal sitting in my fridge or freezer!! Oh, and by the way, Gillian, do you happen to know another good vegan protein powder that does not have stevia in it?
I got the Sunwarrior Protein and even though I like how clean it is, I can’t get over the stevia taste. I ordered some whey protein powder for me and my boyfriend to share as during my time in Australia, I felt fine with my friend’s whey protein … BUT in the longterm run I would like a cleaner vegan protein!
Any suggestions that I could order via iherb or something (only way to get most things)? Thank you!!
Thanks Marie Sophie! I also really like the ingredients in Vega protein powder! While some of their powders are a little “earthy” tasting, the shake n go mixes are really good and easy to use!

I tried the recipe !!!! SO good!! And with a topping of almond butter and raspberry jam (sweetened with agave) the bread remind me of my grandma’s jam christmas cookies!
