Market Smoked Salmon Salad

Want a fresh summer salad that will make love to your senses?

This afternoon I ventured off to the farmer’s market near my apartment.  I bought a bounty of ingredients from local farmers, as well as a few ingredients from the organic stand inside.  These ingredients inspired my salad tonight.

I was given two beautiful baskets of snow peas for the price of one.  When I got home I giddily shelled them and then steamed them up.  How gorgeous is this bright green?

I also bought a giant bunch of radishes, which I rinsed in cold water and sliced into pieces.

I used my beautiful baby potatoes, and boiled some for my salad, and roasted up a bunch of them to enjoy on the side.  The secret to perfect roasted potatoes?  Boil them, bash them around the pot with olive oil and butter, then roast for 30 minutes!  They turn out crispy and delicious!

I also picked up some flavourful smoked salmon from one of the fish stands in the market.  I bought a small packet for a reasonable price, and used it in my salad dressed up with dill and other fresh ingredients.

The spinach, tomatoes, cucumber, potatoes, radish, avocado, peas, dill and smoked salmon were beautiful together.

I dressed it up with a simple dressing of lemon juice, olive oil, red wine vinegar and dijon.

I can’t think of  a better way to celebrate a warm summer evening.

Market Smoked Salmon Salad
 

Ingredients
  • Spinach
  • Smoked Salmon
  • Baby potatoes (boiled or roasted)
  • Steamed snow peas
  • Baby cucumber
  • Baby tomatoes
  • Fresh dill
  • Sliced radishes
  • ½ Avocado
  • Vinaigrette (Olive oil, lemon juice, dijon, red wine vinegar, salt and pepper)

Instructions
  1. Assemble and enjoy!

this looks absolutely incredible and so ‘you’… simple and classy.

I can’t wait until we’re together again (soon!!) dining on fabulous food like this!
