I love Mexican food and kale like 12-year-old girls love Justin Bieber.
They’ve got a case of Bieber fever, I’ve got a case of spicy kale fever. It doesn’t sound as catchy, but it’s equally addictive and not as creepy for me to get hot and sweaty over.
Last night I needed to get out of my apartment so I decided to take my two loves and put them together in a Fiesta Mexican and kale love child salad to take to the beach with me.
This is what I came up with. And yes it is good, it is healthy, and it just might make you sing “Baby, baby, baby, ohhh…”
- Kale
- Baby tomatoes
- Red onion, chopped
- Parsley
- Jalapenos (I used canned)
- Corn
- Black beans
- Lime
- Chili flakes
- Salsa
- Salt and pepper
- Hot sauce
- Assemble salad
- Top with lime, chili flakes, salsa, salt and pepper, and shake it up
