Creamy Salmon Salad

This salad is a life saver.

These summer days have been stressful and busy around here.  While some nights I get a little fancy in the kitchen, I usually come home with a rumbling belly wanting something fast,  fresh and filling.

This salad fits the bill.  It also is made up of on things I generally always have in my kitchen: spinach, broccoli, tomatoes, eggs and canned salmon.

It’s simple, high in protein, high in flavour, and just right on a hot summery night.  I like to keep it simple and mix my salmon with a bit of mayo (veganaise will also do), mustard, herbs, salt and pepper.

Then I finish it off with a squeeze of lemon and a drizzle of balsamic.  Perfection.creamy wild salmon salad

Creamy Salmon Salad
 

Ingredients
  • spinach or mixed greens
  • chopped red onion
  • broccoli
  • hard boiled egg
  • canned salmon (I use wild organic)
  • 2 tbsp mayonnaise (I use organic canola mayo, but you can use any kind you like)
  • 1 tbsp mustard
  • 1 tsp dried herbs
  • salt and pepper
  • balsamic vinegar

Instructions
  1. Hard boil eggs
  2. Assemble salad
  3. Mix salmon with mayo, herbs, mustard and salt and pepper
  4. Drizzle with balsamic

I make almost this EXACT salad at least twice a week. I love it! Canned salmon is definitely a staple in my house, as are eggs & salad greens! :)
