CocoMango Smoothie

It’s been a little gloomy and overcast here in the Bay Area, so this morning I decided to combat the weather with a creamy tropical smoothie. I didn’t intend for it to come out tasting so much like a coconut infused mango lassi, but hey I guess when you put mangos and yogurt together in a drink it’s hard not to get something similar to the most famous mango/yogurt drink of all time. Fortunately, mango lassis are delicious, and I was pretty satisfied with this protein rich breakfast.

I used a healthy dose of coconut water instead of regular water to add some electrolytes and coconut flavor to the smoothie. With a dash of shredded coconut, this drink had a perfect hint of the tropics. I didn’t use any sweeteners because I like the tangy tart of the yogurt and mango, plus the vanilla Greek yogurt already had some sweetness to it. If you want to add a little stevia or honey to sweeten the pot, go for it!

A creamy lassi inspired mango coconut smoothie featuring coconut water for added electrolytes.
Ingredients
  • ¾ cup frozen mango chunks
  • ½ cup vanilla nonfat greek yogurt (any yogurt will work, but I like Greek for the added protein)
  • ½ mango coconut water (I used Zico, but regular coconut water would be fine)
  • 2 TB shredded coconut
  • Optional: stevia or honey to taste

Instructions
  1. Blend & enjoy!

So I mixed this one and the Green Tango and gave it to the dudes at dinner last night. Jasper drank most of it and then played with the rest (totally normal for him) but Ze was floored. He asked me how I managed to make kale taste so good! HOORAY for smoothies!!

Yay! That makes me so happy. Love it when kids can get excited about drinking veggies :)
