I have always had a bit of a love affair with peanut butter and jelly sandwiches. It’s something about the sweet jelly and salty peanuty goodness combined with happy childhood memories that makes it an automatic winner for me. You see, after learning to make ice-cubes and toast, PB&J was my first real culinary achievement. It was the first “dish” that I could prepare and man was I proud of myself. When I got extra fancy and made a toasted PB&J, I’m pretty sure that I crowned myself the best chef in second grade. That might have been a little cocky of me, but guess what? I still love a good toasted PB&J to this day. So show me a 7 year old that can do better and I will totally have a cook off featuring the original recipe.
This afternoon I decided to reinvent this favorite food in smoothie form. When I mentioned it to my husband, he might have made a gagging sound. I’m not sure how a PB&J smoothie could sound repulsive to anyone, but hey, there is no accounting for taste right? I’m not going to force it on anyone, but let’s just say that this frothy glass rocked my world. So fellow PB&J lovers, you are in for a treat!
- 1 cup frozen strawberries (I think raspberries would also be really yummy)
- 1 cup milk (I used almond)
- ½ banana
- 2 TB peanut butter
- Blend all ingredients until smooth.
- Smear the inside of your glass with a little peanut butter before pouring your smoothie for added presentation value (and added peanut butter goodness!)
