Mango Kale Smoothie

I know it has been a minute since we posted a smoothie for you. Gillian is in the middle of working insane hours and moving to a new apartment in her “spare” time (she so crazy), and my computer decided to go into a coma recently. Thus, between the two of us blogging is a bit challenging at the moment. Hopefully you are all too busy having summer fun to care, right?

Rather than mope around while I wait for the “geniuses” over at Apple to diagnose my very sad iMac on Sunday, I’m heading to the river. Goin’ camping for a few days with some of my favorite people, and when I get back there will be more smoothie recipes for you, some canning recipes, a smoothie themed giveaway to share with y’all, and hopefully I will have a functioning computer once more.

Before I go, here’s a delicious cup of blended goodness to get you through the rest of the week, I call it the Green Tango. It’s got mango, kale, and coconut water in it to form a trifecta of nutrition and flavor! While we are on the topic of coconut water, some of you might have heard news about how certain brands of coconut water such as O.N.E. and VitaCoco don’t contain as many electrolytes as their labels claim (you can read the article here). The one brand that seems to be living up to its claims is Zico which has always been my go to. If you wanna side-step the controversy and avoid the coconut water in this recipe, feel free to sub some milk or fruit juice.

Green Tango Smoothie

Ingredients
  • 1½ cup frozen mango chunks
  • 1 cup fresh kale (chopped & packed)
  • ½ cup fat-free greek vanilla yogurt
  • 1 cup coconut water
  • 1 banana

Instructions
  1. Throw it all in a blender. Process until smooth. Enjoy!
