I started this morning with an almond milk cappucino.

Then I headed to our town square for the Tuesday market. It’s bigger in the summer, but come September it shrinks down to a few stands.

My dad picked up some courgettes and lamb sausages from the market, and I decided to create the evening’s side dishes based upon a gift a friend had left us. Two beautiful patty pan squashes and the Plenty vegetarian cookbook by Yotam Ottolenghi. (I am in love and will have to order one for myself.)

After a day spent visiting a nearby city, I came home and got to work in the kitchen. Not before making myself my favourite French aperitif: kir. To make your own, mix a dash of cassis with white wine and enjoy.

Taking inspiration from the Plenty cookbook’s spiced butternut squash recipe I blended cardamom, cinnamon, coriander and cumin with some sea salt.

I then marinated the squash, baked it for 30 minutes, and topped it with a mix of yoghurt, tahini and lime and fresh mint leaves. (I also added chopped red chilis at the end)

I made a garden salad with lettuce from my dad’s garden and tomatoes from the market.

Served with some home made baba ganoush and local wine, it was perfection.

Yum Gill! This looks so delicious. When you say you marinated the squash did you just toss it in the spices and let it sit, or did you add some sort of oil or liquid?
Thanks Ayah! I tossed it with the spices and a bit of olive oil and let it sit a few minutes before roasting! You need to get this cookbook- so beautiful!
DAMN I wish I was there right now. And for your spicy mango rolls. You should definitely give us the recipe for those – it’s mango season in Sarf London!
