Let’s call this part two in man (and meat eating women) pleasing meals.
Yesterday I gave you Spanish Rice, today I give you slow cooked pork tenderloin with carrots and potatoes. Easy, comforting, healthy and delicious.

John’s mom introduced me to pork tenderloin as a meal. I’d always passed it in the grocery store and stuck my nose up a little. I don’t normally love pork, and the tenderloin itself looked daunting to cook.
But John’s beautiful, Irish, and very healthy mother taught me that not only was pork tenderloin extremely lean, it was good for you and easy to cook.
Another bonus, it’s affordable! I saw a beautiful loin at my favourite organic grocer the other day and decided to give it a whirl.
I threw it in the slow cooker with the measly remains of my organic vegetable delivery: onions, potatoes and carrots. I added some dijon, olive oil, leftover red wine and herbs and let the slow cooker do the work.
The result was a beautiful dinner for two, comforting, filling, and perfect for my hungry Irish date.
- Small organic pork tenderloin
- 5 small potatoes
- 2 onions
- 7 carrots chopped
- ½ cup of red wine
- 2 tbsp dijon
- ½ cup vegetable broth
- 1 tbsp olive oil
- Add everything into slow cooker, marinating the meat, and slow cook for 8-10 hours
