Breakfast Tortilla

On Sunday morning John and I were watching Anthony Bourdain’s No Reservations.

We’d been out the night before, and since our dinner was over an hour late to be served, the waiter gave me an extra two free glasses of wine.  Needless to say, I slept like a baby, and woke up 13 hours later hungry and watching Food TV.

I love Anthony Bourdain.  The man knows food.  As we watched him hit up the best hot dogs, deep dish pizza and smoked fish in Chicago I started craving some comfort food myself.

I stood up and proclaimed “I need to make a fried egg served on top of a tortilla with hot sauce and avocado!”

So that’s exactly what I did.

Over one commercial break this breakfast was born.  My best meals come from moments like this, where I have a meal in my mind and I make it happen.

The slice of cheese was John’s added genius.  It would probably smarter and prettier to grate it or melt it, but we were rolling with the punches.

I heated up some leftover slow cooked shredded chicken to his, and he was pretty happy about it.

Even though we used fried egg I’d say this breakfast is a great take on healthy comfort food.  It sure as hell was comforting.  We also used a small tortilla, one egg, and no extra grease other than the oil for the egg, so it beats out any diner breakfast in a heartbeat.

Making your favourite comfort dishes in a smaller portion and add in more fresh ingredients is a great way to make it healthier.  Especially if it’s this delicious in the end.

And if you’re wondering, yes, I do have a hot sauce problem.

Breakfast Tortilla
Prep time:

Ingredients
  • 1 tsp olive oil
  • Egg
  • Small tortilla
  • ¼ avocado
  • Baby tomatoes
  • Corn
  • Cheese (optional)
  • Hot sauce (I recommend Valentinas)

Instructions
  1. Heat up your pan on high with olive oil
  2. Warm your tortilla in the oven or microwave
  3. Decorate the plate with tomato, corn and avocado
  4. Fry your egg, add it on top of your tortilla, add cheese and hot sauce and enjoy!

This sounds like the perfect quick brunch, and I too am a hot sauce fiend. Genetic?

Totally genetic. My dad used to be like that but now France is making him wimpy with spice!

You know I love my man Tony too, and this breakfast looks delicious! My TV-husband and an egg tortilla… sounds like the perfect Sunday morning to me! ;)

Hahaha… my friends always joke with me about liking a little eggs with my hot sauce. And it’s ALWAYS chipotle cholula because that is my favorite. I always have a bottle in my purse!

Oh man, chipotle is the best! I have mini tabascos I carry in my purse, but Valentinas is my true love!
