One of my favourite ways to prep for the week is to make a big batch of quinoa.
It’s a versatile grain that allows me to add a punch of protein to my salads, or to make a quick and easy bowls like this one.
This warm spiced quinoa bowl is delicious, warming, full of healthy fats, protein and anti-inflammatory properties.
I also added kale and tomato into the mix and topped it with avocado and hemp seeds. This is one of the easiest, most satisfying lunches I’ve made in a while.
Go on, get cozy and make one for yourself, even winter and can be warm and tasty!
Stay tuned for another great protein packed quinoa recipe later this week.
In the meantime you might also want to try Gena’s easy green quinoa bowl - it looks delicious!
