Santorini Skewers and Salad

We are planning on spending our honeymoon in Santorini.

Santorini is a gorgeous island in Greece that I visited as a young girl. The white houses and bright blue sky are serene and calming, the food is fresh, and it feels like a perfect place to relax for a week after we get married in France.

Since we’ve been spending so much time looking at hotels and planning our trip, I was inspired to get us ready for the delicious food.

These simple chicken skewers served with Greek yogurt and a Greek salad make a perfect summer dinner, and make me feel ready to take off any day now.

But since I have to wait until September, delicious meals like this will have to do for now.

Greek Chicken Skewers and Salad
Serves: 2
 

Ingredients
  • 2 Chicken breasts
  • ¼ cup Lime juice
  • ½ cup Vegetable broth
  • 2 tsp Herbes de Provence
  • 2 tsp Cumin
  • Cucumber
  • Tomato
  • Onion
  • Feta
  • Olive Oil
  • Red wine vinegar
  • herbs
  • salt and pepper
  • *Side of greek yogurt optional

Instructions
  1. Marinate chicken breast in lime juice, broth, herbs and spices.
  2. If you have a barbecue, soak your skewers then spike your chicken and grill until fully cooked. If you have a small home grill like me – grill your chicken before hand, then chop it up and skewer them!
  3. Assemble greek salad, dress with oil and vinegar, and serve all with a side of Greek yogurt.
