Tara’s Healthy Potato and Egg Salad

My friend Tara is one of those people who acts like she doesn’t cook, but when she makes something it’s absolutely incredible.

Then again, she’s a very good actress. She’s currently preparing her one woman show Mahmoud for Toronto and New York Fringe Festival so she doesn’t have a lot of spare time to spend in the kitchen!

Still, she loves good food and is always sending amazing food texts. Whenever she comes up with a great new healthy dish I get a message like “I am eating such a Gill meal right now!”

It makes me pretty happy, and also inspires me to whip up something healthy and delicious myself.
