Flank Steak Tacos

I always joke that I must have had a Mexican milk man.

I live for Mexican food and crave it like no other. Lucky for me, John is just as wild about anything stuffed into a corn tortilla and topped with hot sauce.

Flank steak tacos are an affordable week night meal that’s easy to throw together for your loved ones.

I got a giant piece of flank steak for $6 for my butcher that provided us with four or more servings. Dare I say the leftovers taste even better?

The method of cooking the steak is extremely easy. By throwing the flank steak in the slow cooker with salsa and spice you give it time to break down and tenderize.

Afterwards, shred it with a fork for a super satisyfing lean protein you can stuff into corn tortillas and top with your toppings of choice!

Flank Steak Tortillas
 

Ingredients
  • Flank steak
  • Jar of salsa
  • 2 tsp chili powder
  • 2 tsp liquid smoke
  • Hot sauce
  • Corn tortillas
  • Greek yogurt or sour cream
  • Avocado

Instructions
  1. Throw flank steak in the slow cooker for 4-10 hours with salsa, chili powder, liquid smoke and hot sauce.
  2. Remove and shred with a fork.
  3. Fill tortillas with steak and top with avocado, greek yogurt and more hot sauce

Did you cook these on low for the entire time? Looks great!

Hi Hawley! You could either cook on low for a longer amount of time, or on a high for 4-6 hours. Due to a time crunch I cooked on high, but I think it’d be even better on low!
